食(shi)物(wu)(wu)(wu)中(zhong)(zhong)毒是由(you)于(yu)進食(shi)被細(xi)菌及其毒素污染(ran)的食(shi)物(wu)(wu)(wu),或攝(she)食(shi)含有(you)毒素的動植(zhi)物(wu)(wu)(wu)如(ru)毒蕈、河(he)豚等(deng)引(yin)起(qi)的急(ji)性(xing)(xing)中(zhong)(zhong)毒性(xing)(xing)疾病。變質食(shi)品(pin)、污染(ran)水源(yuan)是主(zhu)要(yao)傳染(ran)源(yuan);不潔手、餐具和(he)帶菌蒼蠅是主(zhu)要(yao)傳播途徑。根據各種致(zhi)病源(yuan),食(shi)物(wu)(wu)(wu)中(zhong)(zhong)毒可以分為以下四類:1.化學性(xing)(xing)食(shi)物(wu)(wu)(wu)中(zhong)(zhong)毒;2.細(xi)菌性(xing)(xing)食(shi)物(wu)(wu)(wu)中(zhong)(zhong)毒;3.霉菌毒素與霉變食(shi)品(pin)中(zhong)(zhong)毒;4.有(you)毒動植(zhi)物(wu)(wu)(wu)中(zhong)(zhong)毒。
